Ginger garlic paste - 1 tbsp
Oil - 2 tbsp
Green chilli - 2
Cinnamon - 1 inch

Garam masala powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1 tsp
Fennel seeds - 1 tsp
Mint leaves - 4

Masala vadai - 6
Method
- Take a pan and add 2 tbsp oil in it. Add cinnamon , clove , cardamon , bay leaf and saute for 1 min
- Now add the ginger garlic paste and saute it till the raw smell goes off
- Add the finely chopped onion , green chilli, mint leaves and saute well . Add the chopped tomatoes and saute well till it is combined
- Dry mix the chilli powder , garam masala powder , coriander powder and turmeric powder in a bowl and then add to the pan . Add little water and mix well
- Now add salt and add more water so that the masala cooks well
- After 10 min add the broken masala vadai to the pan . Simmer the flame and slow cook for 10 min so that the vadai absorbs all the masala. Once it is cooked and combined to one add the chopped coriander leaves , curry leaves and serve hot with set dosa, idli .
- You can steam the vada in a idli cooker instead of frying .
- Add a pinch of sugar to improve the taste of vadacurry
- You can make it with leftover vada
- Always adjust spices and salt according to taste
