Papaya wine

Vadacurry


Ingredients
Onion - 2
Tomato - 2
Ginger garlic paste - 1 tbsp
Oil - 2 tbsp
Green chilli - 2
Cinnamon - 1 inch
cloves - 3
Cardamon powder- 1 tsp
Bay leaf - 1
Chilli powder - 1 tbsp
Garam masala powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1 tsp
Fennel seeds - 1 tsp
Mint leaves - 4
Coriander leaves
Curry leaves
salt
Masala vadai - 6


Method

  1. Take a pan and add 2 tbsp oil in it. Add cinnamon , clove , cardamon , bay leaf and saute for 1 min
  2. Now add the ginger garlic paste and saute it till the raw smell goes off
  3. Add the finely chopped onion , green chilli, mint leaves  and saute well . Add the chopped tomatoes and saute well till it is combined
  4. Dry mix the chilli powder , garam masala powder , coriander powder and turmeric powder in a bowl and then add to the pan . Add little water and mix well
  5. Now add salt and add more water so that the masala cooks well
  6. After 10 min add the broken masala vadai to the pan . Simmer the flame and slow cook for 10 min so that the vadai absorbs all the masala. Once it is cooked and combined to one add the chopped coriander leaves , curry leaves and serve hot with set dosa, idli .
Note
  1. You can steam the vada in a idli cooker instead of frying .
  2. Add a pinch of sugar to improve the taste of vadacurry
  3. You can make it with leftover vada
  4. Always adjust spices and salt  according to taste
