Ingredients
Carrot - 2
Green chilli - 3
Onion (medium) - 1
Beans - 1/4 cup
Cabbage - 1/4 cup
Green peas - 1/4cup
Potaoes - 3
Lemon juice - 1tsp
Ginger - small piece
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Garam masala powder - 1tsp
Pepper powder - 1 tsp
Salt
Egg - 1
Cornflakes powder / bread crumbs - 1/2 cup
Coriander leaves

Method
- Boil the potatoes , remove the skin and mash it and keep aside
- In a pan , add 1 tbsp of oil .Add chopped ginger , chopped onion and saute well
- Now add the chopped vegetable one by one and saute it well for about 5 min. Add the turmeric powder , garam masala powder , pepper powder and chilli powder and saute it for about 2 min
- Add sufficient quantity of water for the vegetable to cook. When the vegetable are half cooked add the required amount of salt .
- Cook till all the water evaporates .
- Now add the mashed potatoes and mix it well.
- Once the heat has gone down a little make medium size balls out of it and flatten it to 1/2 inch thickness
- Now take a small bowl , add the egg whites and beat it for half a minute
- In another plate take the bread crumbs / corn flakes powder (Here I have used cornflakes)
- Take a pan , pour the required oil to fry all cutlets
- Now take a flattened ball dip it in the egg white and coat it in the cornflakes powder / breadcrumbs and drop it in the hot oil .
- Once it is cooked on one side flip to the other side.Once it is cooked take out from the oil , drain in a kitchen tissue.
- Garnish with coriander leaves .Serve hot with tomato ketchup
Note:
The balls made should be free from water or else the cutlet will be oily and it may break
