Papaya wine

Banana stem kola/ vazhathandu kola


Ingredients
Banana stem - 2 cups
Kadala paruppu/ Gram dal - 1/2 cup
Pottukadalai - 1/2 tbsp
Shallots - 12
Garlic - 3 pods
Fennel seeds -1 tsp
Kasa Kasa - 1/4 tsp
Dried red chilli -6
Green chilli - 4
Coconut -1/2 tbsp
Cinnamon - 1/4 inch piece
Water - 1/2 cup
Salt
Oil

Method

  1. Dry roast the gram dal and set aside to cool
  2. In a cooker add the banana stem and add 1/2 cup water. Cook for 1 whistle.
  3. When it is cooled,  squeeze the remaining water and grind it coarse in a blender .Set aside
  4. In a pan heat about a tbsp of oil. Add dried red chilli,  pottukadalai,  green chilli,  shallots,  garlic,  fennel seeds,coconut,  kasa Kasa and cinnamon and saute it till the raw smell goes off.
  5. Once it cools off blend it to a coarse paste.
  6. In a bowl add the coarse blended banana stem, powdered gram Sal. Add the coarse blended masala and mix it well
  7. Heat the oil required for frying. Now shape it round balls.Initially keep the flame high.  Deep fry till the kola is cooked.Serve hot with a sauce or a dip
