Ingredients
Egg - 6
Ginger - 1/4 inch piece
Garlic - 4 cloves
Big onion - 4
Tomato - 1
Green chilli -2
Curry leaves - 3 string
Fennel seeds - 1/4 tsp
Chilli powder - 1 tsp
Kashmiri chilli powder - 1 tsp
Turmeric powder - 1 tsp
Pepper powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala powder - 1/2 tsp
Coconut oil - 3 tbsp
Water
Salt
Sugar (optional)
Method
- Slice the onions and keep it aside.Boil the eggs and keep it aside
- Crush ginger , garlic , green chilli and fennel seeds
- In a pan add 3 tbsp of coconut oil. Once the oil is heated add the crushed ginger , garlic , green chilli and fennel seeds.Saute it, don't allow it to burn
- Once it is sauted , add the sliced onions and saute it well till the colour of onion changes or it becomes translucent
- Now add Pepper powder , turmeric powder, coriander powder , kashmiri chilli powder , chilli powder and garam masala powder. Mix it well with the onions for about 3 min
- Now add a cup of water and cover and cook for about 5 min. After 5 min add the sliced tomatoes , mix well.
- Then add salt and cover and cook for about 5 min
- Add a pinch of sugar to it. But it's optional
- Cut the boiled eggs and add it to the masala. Put some masala on top of the egg. Cover and cook for about 2 min
- Serve it with appam and chapathi
