Methu vadai/ how to make methu vadai



Ingredients
Whole Urad dal - 1 cup
Shallots - 15
Green chilli - 3
Ginger - 1 tsp
Hing  - 1/2 tsp
Curry leaves - 1 sprig
Salt
Oil

How to prepare

  1. Soak the urad dal for 2 hours. Drain the excess water after the soaking time
  2. Take the urad dal in a mixie / grinder. While grinding just sprinkle water and grind
  3. Once the batter is fluffy take it out immediately from the grinder / mixie
  4. To the batter add sliced  shallots , chopped ginger , chopped green chilli , Hing , curry leaves and salt. Mix it well
  5. Heat oil in a pan. The flame should be medium while cooking
  6. Just wet your hands and take a medium sized ball out of the batter , place it in your palm , pat gently and make a hole in the centre
  7. Now carefully slide in the oil and cook the vadas
  8. Flip it over and cook well on both sides. Once its done take out from the oil and drain the excess oil in a kitchen towel
  9. Serve hot with chutney

Note
  • Dont grind the batter to a fine paste.
  • Dont soak the urad dal for a long time as it will absorb more oil
  • Use ice water for grinding if you are grinding in a mixie.If the batter gets heated up , you will get harder vadas
  • After adding onions and salt dont keep it for a long time as the batter will become watery . Even you can add peppercorns
