Egg burji / How to make egg burji



Egg-4
Tomato-1 (small)
Onion-2
Green chilli- 2 tsp (chopped)
Ginger  - 1/2 tsp ( finely chopped )
Turmeric powder - 2 tsp
Red chilli powder - 2 tsp
Pepper powder - 1/4 tsp
Pav bhaji masala - 1/4 tsp
Butter - 1 tbsp
Salt
Oil
Coriander leaves

Method
  1. Chop the onion finely.
  2. In a pan add the butter and oil. Once it is hot add the chopped onion. Saute it till it becomes transparent.
  3.  Add the green chilli and ginger. Saute it for about 2 min
  4. Add the turmeric powder,  red chilli powder,  Pepper powder and pav bhaji masala powder. Saute till the raw smell goes off
  5. Now add chopped tomato and required salt
  6. Break open eggs in a bowl,  whisk it with little salt.
  7. Now add the eggs to the masala. Mix it well. First it will forms lumps. Once the eggs gets cooked it will go off
  8. Add some finely chopped coriander leaves .Serve hot with a pav bhaji or serve it plain

Adjust spice levels according to taste
