Boondhi Laddu


Laddus is one of my favorite sweets. I wondered how they make this. My colleague 'S mother in law once made this laddu. Just awesome taste. I learnt the trick from her.
 For laddu,  sugar syrup consistency is very important. If not the syrup will not be absorbed .Also the boondhi shouldn't be crisp.

Ingredients
Besan flour - 1.5 cups
water - ( 1 cup - 1/2tbsp)
Ghee
Cashew
Raisins
Cardamon powder

For sugar syrup
Sugar - 2 cups
Water- 1 cups

How to prepare

  1. In a bowl add the besan flour. If possible sieve it
  2. Sprinkle water little by little and mix it well. I used a whisk for this.
  3. Prepare the sugar syrup. For this take a thick bottomed pan and add the sugar and water. Mix it well. Boil it to a string consistency. Keep it aside. It should be hot
  4. In a pan , heat the oil , Take a boondhi ladle and pour the batter into it . Spread the batter with the help of a small spoon and move the ladle ( if you keep in once place it will start to accumulate)
  5. Fry the boondhis .Dont fry crisp as sugar solution will not be absorbed
  6. Remove the boondhis from oil . Repeat the process . Once its done add the fried boondhis to the sugar syrup. Add some cardamon powder as well
  7. Once the boondhi absorb sugar syrup , take about a tbsp of boondhis to a mixie jar
  8. Just whip it . Add it to the boondhis and start to form balls with the help of ghee applied in hand. 
  9. You can add fried cashew and raisins
Note
  • The ball should be formed when the boondhis are still hot or else you will not be able to form balls
  • The ball should be formed tightly . For binding purpose we have added the grinded boondhi
