Papaya wine

Lemon pickle


Ingredients

Lemon - 15
Garlic - 15 cloves
Ginger - 1/2 inch piece
Green chilli -8
Red chilli - 3
Turmeric powder - 1/2 tsp
Asafoetida - 1/2 tsp
Fenugreek powder- 1/4 tsp
Mustard seeds - 1/4 tsp
Gingelly oil
Curry leaves
Water
Salt
Sugar - 1 tsp
Vinegar - 1/4 cup

How to prepare

  1. Clean the lemon and pat dry. Steam the lemon for 3 min
  2. Allow it to cool a bit and cut the lemon into 4 pieces and remove the seeds
  3. In a clay pot add the gingelly oil .Once the oil is hot , add the chopped garlic , ginger .Saute it till the raw smell goes off.
  4. Add the red chilli , turmeric powder , asafoetida , fenugreek seeds , mustard powder .Saute it till the raw smell goes off
  5. Add the green chilli, mix it well.now add about 1 cups of boiled water .mix it well .
  6. Add the steamed chopped lemon .Allow it to mix well .Add required quantity of  salt and boiled and cooled vinegar .Mix it well.Switch off the flame .Allow it to cool
  7. Once it's cooled transfer off to a clean dry bottle .Use it after a week
