Soft idli / How to make idly batter for soft idli

Ingredients
Idli rice - 3 cups
Urad dal - 1 cup + 1/4 tbsp
Fenugreek - 1/2 tsp
Poha - 1/2 tbsp
Rock Salt
Ice water
water

Method

  1. Wash the idli rice till you get a clear water
  2. Simlarily wash the urad dal until the water is clear
  3. Soak idli rice for 4 hours
  4. Soak the urad dal for 3 hours
  5. Soak the poha for 1/2 hour
  6. Drain the water and reserve the water for grinding 
  7. First grind the urad dal until you get a smooth , fluffy batter . Grind it by adding little water.To check if the urad dal is done take a pinch of batter in a bowl of water. If it floats in water its done
  8. Then add the rice , fenugreek and poha , grind it smoothly.
  9. Switch off the grinder .Add required salt mix well .
  10. Mix the urad dal batter . The batter should have airy bubbles 
  11. Allow it to rest for 10 to 12 hours
  12. Take a idli cooker . Grease the pan , pour the batter. Dont overmix the batter. Idli will become hard
  13. Once its done , remove from the cooker . Serve with chutney and sambar
