Ingredients
Dates - 20 to 25
Gingelly oil-3 tbsp
Ginger - 1 tsp
Garlic - 8 cloves
Green chilli - 1 tbsp
Chilli powder - 1 tbsp
Kashmiri chilli powder - 2 tsp
Turmeric powder - 1/2 tsp
Asafoetida powder - 1/2 tsp
Fenugreek mustard powder - 1/4 tsp
Hot water - 1 cup
Vinegar - 9 tbsp
Jaggery - 1 tsp
Salt
Method
- Deseed the dates and soak it in hot water for about 5 min
- In a clay pot, add 2 tbsp of gingelly oil.Once oil heats up add the finely chopped ginger ,garlic and green chilli
- Saute till the raw smell goes off
- In a bowl, combine the chilli powder, asafoetida powder fenugreek mustard powder ,turmeric powder and Kashmiri chilli powder
- Add all the powders and saute till the raw smell goes off
- Now add 1 cup of boiled water and vinegar. allow the masala to cook
- Add the chopped dates. Mix it well with masala. Add required salt. Once its done, add the jaggery , mix well and switch off the flame.
- Once its cooled transfer it to a air tight bottle and use it after 3 days
- Once transfered to bottle heat 1 tbsp of gingelly oil , cool it down and pour it over the top .
If the dates are soft , it's not required to soak
Use a dry spoon
To prevent the burning of powders combine all the powders before putting it in the pan
Use of jaggery is optional
