Dates pickle / How to make dates pickle



Ingredients
Dates - 20 to 25
Gingelly oil-3 tbsp
Ginger - 1 tsp
Garlic - 8 cloves
Green chilli - 1 tbsp
Chilli powder - 1 tbsp
Kashmiri chilli powder - 2 tsp
Turmeric powder - 1/2 tsp
Asafoetida powder - 1/2 tsp
Fenugreek mustard powder - 1/4 tsp
Hot water - 1 cup
Vinegar - 9 tbsp
Jaggery - 1 tsp
Salt

Method
  1. Deseed the dates and soak it in hot water for about 5 min
  2. In a clay pot,  add 2 tbsp of gingelly oil.Once oil heats up add the finely chopped ginger ,garlic and green chilli 
  3. Saute till the raw smell goes off 
  4. In a bowl,  combine the chilli powder, asafoetida powder  fenugreek mustard powder ,turmeric powder and Kashmiri chilli powder 
  5. Add all the powders and saute till the raw smell goes off 
  6. Now add 1 cup of boiled water and vinegar.  allow the masala to cook
  7. Add the chopped dates. Mix it well with masala. Add required salt. Once its done,  add the jaggery , mix well and switch off the flame. 
  8. Once its cooled transfer it to a air tight bottle and use it after 3 days 
  9. Once transfered to bottle heat 1 tbsp of gingelly oil , cool it down and pour it over the top .
Note:
If the dates are soft , it's not required to soak
Use a dry spoon
To prevent the burning of powders combine all the powders before putting it in the pan
Use of jaggery is optional
