Ingredients
Red wine - 1.5 cups
Mixed dry fruits - 3 cups
Maida/ all purpose flour - 2 cup
Sugar - 1 cup+2tsp
Softened butter - 1 cup
Egg -4
Baking soda - 1 tsp
Baking powder - 1 1/4 tsp
vanilla essence - 2 tsp
Orange zest - 3 tbsp
Cardamon -2
cinnamon - 1/4 inch piece
cloves -1
Dry ginger-1`/4 inch
Hot water
Sugar - 1/2 cup
Method
1.Soak the dry fruits along with the wine in a glass bottle for minimum 2 weeks
Mix it with a dry spoon once in two days
2. Take a dry mixie jar and powder the cardamon , cinnamon , cloves and dry ginger to a powder
3.Preheat the oven to 350 F (180 C) for 10 to 12 min. Grease the cake tin ( 9inch and 8 inch) and line it with a wax paper or parchment paper
4.In a pan add ½ cup
sugar and 1 ½ tbsp hot water. Mix till it is dissolved.
5.After it gets dissolved ,switch on the flame and allow it to
boil, the colour will change to yellow and turn to brown .Switch off . Add 1
tbsp of hot water.Allow it to cool
6.Sieve together maida,baking soda and baking powder .Set aside
7.Separate egg white and yolks. Beat egg white till it forms peak
8.In another bowl mix the egg along with (1 cup +2 tsp ) sugar. Add the butter.Beat it well till cream forms
9.Now add the vanilla extract , orange peels. Beat it again for a minute.Add the powdered spices and half of dry ingredients. Beat at low speed for 30 sec
10.Add the caramel syrup and remaining maida . Mix it well with the help of spatula
11.Add the egg whites and fold it gently
12.Sieve the dry fruits from the wine.Dust the dry fruits with maida and add it to the cake batter .Fold it gently.Add 2 tbsp of wine to the batter .Mix it
13.Transfer the batter to the cake tin .Bake it at 180c for 40 to 45 min . Once done ,take out from the oven ,allow it to cool for 30 min. Demould it .Allow it to cool

- The dry fruits soaked in wine is good for about 6 months
- The cake tastes good after a day
- Egg and butter should be at room temperature
