Papaya wine

Banana walnut muffins (eggless)




Makes -5 to 6 muffins

Ingredients
Maida -3/4 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Banana - 2
Walnut -1/4 cup
sugar - 1/2 cup +1/2tbsp ( before powdering)
Vanilla essence - 1 tsp
Vegetable oil- 1/4 cup
Salt -a pinch

 How to make

  1. Preheat the oven at 180 c for 10min.Line a muffin tray with muffin liners 
  2. Powder the sugar.Smash the banana with the help of a fork and mix with the sugar . Add the oil and vanilla essence . Mix it with the help of a whisk till it combines well.Set aside
  3. Dry mix Maida, salt ,baking powder and baking soda. Sieve it
  4. Pour the banana mix ,Start to fold gently .Fold till everything is combined
  5. Add the chopped walnuts. Mix it gently to the batter
  6. Fill the muffin tray with 3/4 batter.Sprinkle walnuts .Bake it for 25 to 30 min.Once done transfer it to a cooling rack 

 Notes

  • Dont overmix as it will harden the muffins
  • I have used robusta in this
