Ingredients
Cowpeas /Black eyed peas- 1/4 cup
Ashgourd- 2 cups
Green chilli - 3
Thin Coconut Milk - 1 cup
Thick Coconut milk - 1/2 cup
Coconut oil - 1 tbsp
Curry leaves
Salt
How to make
- Cut ashgourd into small pieces . In a cooker add the ashgourd, green chilli (slitted) and 2 cups water.Cook for 2 whistles or it is 3/4 done
- Pressure cook the black eyed peas for 1 whistle.
- In a thick bottomed pan , add the cooked ashgourd .Cook till excess water is removed.Add the cooked black eyed peas and thin coconut milk.Cook till it is reduced a little .Add the salt
- Add the thin coconut milk and allow it to boil for 5 min.Once thickened ,add the thick coconut milk,heat it ,dont boil too much
- Sprinkle curryleaves and add a tbsp of coconut oil and mix it well
