Bittergourd theeyal /Pavaikkai theeyal




Ingredients
Bittergourd - 1
Grated coconut - 6 tbsp
Coriander seeds- 1 tbsp
Turmeric powder -1/2 tsp
Fenugreek - 10 or 12 nos
Dried red chilli - 5
Hing -1/4 tsp
Tamarind - gooseberry sized
Shallots - 5
Salt
Oil
Jaggery - 2 tsp
Curryleaves
Mustard seeds - 1/4 tsp


How to make
  1. Soak the tamarind in little water and set aside
  2. Heat a pan.once the pan gets heated up , add the grated coconut , dried red chilli , coriander seeds , fenugreek seeds , till an aroma comes and it's roasted to Golden colour.Switch off the flame and allow to cool
  3. Once it's cooled down , grind it to a smooth paste
  4. In another pan , heat the oil .once the oil gets heated up , add the mustard seeds .once the mustard seeds start to splutter , add the curry leaves and dried red chilli
  5. Now add the shallots , Saute it till it becomes translucent . 
  6. Add the sliced bittergourd and saute it
  7. Add required salt .Add the tamarind water , allow it to boil
  8. Once it's boiled add the grated mix and cook it .Check for salt
  9. Once switch off the flame and serving it hot with rice

 Notes
To reduce the bitterness , soak the bittergourd in vinegar or tamarind water for 30min before cooking
